August- Black Bean Spread
A simple dish that’s quite versatile, packed with protein and fresh ingredients. Great for a nutritious, satisfying snack or an accompaniment for a main in latin cooking. I ve made this as dip for veggies or pieces of pita and a filling for Venezuelan arepas.
1 can of black beans
2 green onions, sliced
1 clove of garlic, minced
½ tsp coriander seed
½ tsp cumin
¼ tsp chilli powder
1/3 cup cilantro, chopped
1 lime, juiced
1 tbsp olive oil
salt and pepper
Mash the beans in a bowl and then add the remaining ingredients. To make the spread smooth I used an immersion blender, a food processor would probably suffice as well.
Can be thinned with a little water or additional olive oil. To add a spicy kick add some chilli flakes. This dish is best made ahead of time to allow all the flavors to marry.
