August- Dill-icious Potato Salad

A common picnic favorite!  Although this isn’t your Momma’s typical mayo-laden potato salad. A healthier version of a popular dish with the addition of greek yogurt and the tanginess of dill pickles adds smooth consistency with surprising crunch.  This vegetarian dish is high in protein which works lovely on its own with a side salad or accompanying a BBQ’d main.

6 boiled potatoes, diced (I enjoy a mixture of white and red potatoes with the skins left on)
3 hard boiled eggs
2-3 green onions, chopped
1 celery stick
3 dill pickles, chopped
1 cup greek yogurt
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon of fresh dill, finely chopped

Combine all ingredients in a bowl and toss to coat.  Best if chilled prior to serving.
