February- French Toast & Mixed Berry Compote

February- Gourmet French Toast with Mixed Berry Compote.

A great recipe on a cold winter’s day perfect for a mid morning brunch.  Or a well deserved treat after a long winter’s run.

French Toast

Thick-sliced crusty bread
3 eggs
1/4 cup milk
1/2 teaspoon white vanilla
dash of cinnamon

Whisk together eggs, milk, vanilla and cinnamon.  Dip bread into egg mixture and cook onto a lightly oiled pan or griddle until golden brown.

Mixed Berry Compote

2 1/2 cups of mixed berries (fresh or frozen)
1/2 cup water
1/2 cup pure maple syrup
1 teaspoon lemon juice
pinch of salt
2 teaspoons cornstarch mixed with 1 teaspoon water

Place first 5 ingredients into a small pot and simmer over medium to low heat.  As berries begin to soften gradually add cornstarch mixture to thicken.  Generously ladle over french toast.  Enjoy!
