January- Chicken Soup

Flu Buster Chicken Vegetable Soup

–          Add 1 lb. of raw chicken pieces to a pot.  Can use a combination of thighs / drumsticks / breasts.
–          Add 6 cups of vegetable broth
–          Add 1 large onion, diced
–          Add 3 celery stalks, diced
–          Add 2 cloves of garlic, minced

Simmer on low for 1 hour.

–          Add 1-2 cubed carrots and 2-3 cubed potatoes
–          a good shake of cayenne pepper
–          salt and pepper

Simmer on low until vegetables soften.

–          sprinkle with fresh parsley
