Ginger Sesame Salmon on Arugula

May for me feels like the true month of Spring.  Temperature is warmer, snow is long gone and all the trees and plants are a beautiful array of colour during this month when everything is out in bloom.  Its this time of year I am happy to put the comfort foods aside and re-introduce fresh green salads.   Salmon and Arugula are both considered power foods and make an excellent pair for bone health. Arugula is high in calcium and salmon contains vitamin D, necessary for calcium absorption.

Sarah Nottingham, RMT's recipe of the month

– 1lb. of fresh salmon

-2 cloves of minced garlic
-2 tsp sesame oil
-1 tbsp olive oil
-1 tsp grated ginger
-1 tsp honey
-sea salt

Whisk all ingredients together and marinade on salmon for 2 hours.
Salad Dressing

-3 cloves roasted garlic
-2 tbsp olive oil
-2 tsp balsamic vinegar
-pinch of sugar
-salt and pepper

-2 green onions and one red bell pepper, thinly sliced (set aside)
-2 tbsp toasted sesame seeds (set aside)
Whisk all ingredients together.

Place salmon in a shallow baking dish and bake at 350 degrees uncovered for 15 minutes or until flakes easily with a fork.  Fill a medium bowl with arugula and toss salad dressing.  Top with salmon and sprinkle green onions, red pepper and sesame seeds.  Enjoy!
